AN INTERVIEW WITH JACQUELINE MICALLEF

It’s been a long time coming, but here is the promised interview with our friend Jackie, author of the brand new cook book So Berry Nutritious.

FF: Please tell us a little bit about yourself: who is Jacqueline Micallef? What gets you up in the morning?

JM: Hello Friends! First of all, thank you so much for taking the time to stop by and read this interview. It truly means a lot to me that you’re here. Whether you’ve been following my journey for years or you’re just discovering So Berry Nutritious, I’m grateful you’ve taken a few moments out of your day to get to know me a little better. I hope you enjoy reading my story as much as I’ve enjoyed sharing it with you.

So… who is Jacqueline Micallef? I was born and raised in Toronto, Ontario, in a Mediterranean household where food was always at the heart of every gathering, celebration, and family tradition. Although I grew up eating meat, vegetables were always a staple at our table. Looking back, I think that’s where my appreciation for fresh, wholesome ingredients first began.

My dad was a great cook growing up and although I didn’t start cooking until I was an adult, I think watching him cook with ease and enjoyment made more of an impact on me than I had realized.

At 23, I set off on what became one of the biggest adventures of my life, working aboard a Carnival cruise ship as a youth counsellor. It was an unforgettable experience that introduced me to incredible people from around the world, many of which are still my friends today at 47.

After that, I spent a few years working in hotels before taking another leap of faith and moving to Vancouver with my cruise ship roommate Lisa to explore an entirely new career in the film industry. That “new career” turned into more than 20 wonderful years. I worked as a stand-in on Smallville for six seasons and had the opportunity to work on many other television productions along the way. It was an exciting chapter of my life that brought me lifelong friendships and, unexpectedly, the love of my life.

During the filming of Motive, I met my partner, Louis Ferreira, and we’ve now been together for 13 years. We bonded over many things, but our shared love of food was there from the very beginning. I still laugh thinking about watching him enthusiastically slurp up his pasta as if someone was about to steal it from him! That’s when I knew I’d found someone who appreciated good food as much as I did.

I’ve always enjoyed cooking and eating healthy, but it wasn’t until the COVID pandemic that I decided to pursue formal culinary training and deepen my knowledge of plant-based cooking. As life unfolded, both Louis and I faced our own health challenges, and that became a turning point. Instead of simply accepting things as they were, I became passionate about learning how food could support our health and well-being. That journey eventually inspired me to create So Berry Nutritious.

So, what gets me up in the morning? For me, it’s having something meaningful to create. I love developing new recipes, learning new skills, and working on projects that might inspire someone else to cook a little more, eat a little healthier, or simply feel more confident in the kitchen. There’s something incredibly rewarding about hearing that one of my recipes has become part of someone’s family dinner or helped them discover that healthy food can be exciting and full of flavor. At the end of the day, I believe food is so much more than what we put on our plates. It’s about bringing people together, creating memories, nourishing our bodies, and sharing love with the people around us. My hope is that So Berry Nutritious inspires others to discover just how enjoyable healthy cooking can be and maybe even create a few new family traditions of their own.

FF: We have featured many of your recipes in past Ferreira Fest newsletters. Now we’re here to celebrate our 200th newsletter and the release of your cookbook SO BERRY NUTRITIOUS. Please tell us about how you got the idea for the book.

JM: After completing my culinary training, I discovered another creative passion that I hadn’t expected, food photography. I found myself treating every dish like a piece of art. I loved searching around the house, or wherever Louis and I happened to be, for interesting props and backgrounds that would help tell a story. It wasn’t just about the recipe anymore, it was about creating a mood and capturing the beauty of the meal.

Looking back, I think my 20 years working in the film industry shaped the way I see the world, including the way I present food. I learned that every detail helps tell a story, and I found myself bringing that same creative approach into my recipes and photography. Over time, I had built quite a collection of recipes and photographs.

Before Louis and I left for Greece for the first season of House of David, I was visiting my family in Toronto when the idea finally clicked.

At first, I simply wanted a way to organize and preserve all of my recipes so I could easily come back to them. Then I thought, “Why not use my time in Greece productively while Louis is filming?” That’s when the idea for So Berry Nutritious was born. I realized I could take something I loved creating and turn it into something tangible that I could share with others. It became much more than just a collection of recipes, it was a way to combine my love of cooking, photography, creativity, and storytelling into one project.

It certainly didn’t happen overnight. I never wanted to rush the process. I took my time developing each recipe, photographing every dish, and carefully designing every page because I wanted the finished cookbook to be something people would not only cook from but also enjoy flipping through. Looking back now, I’m so glad I trusted the process because every step along the way helped shape So Berry Nutritious into the book it is today.

FF: What was the biggest challenge you encountered working on this book? How was it resolved?

JM: Oh boy… where do I begin? There were so many challenges! First of all, I had absolutely no idea where to start. I had the recipes and the photographs, but what to do with them next was a completely different story. I knew very little about designing or publishing a cookbook. What program should I use? What size should the book be? How do you format it? What layout works best? Which fonts should I choose? What font size is readable? How do you upscale photos without losing quality? And then there was the biggest question of all, how on earth was I going to print it? Soft cover? Hard cover? What paper weight? Glossy? Matte? How do I decide? The list seemed endless.

So, what did I do? I turned to YouTube. I spent countless hours researching, watching tutorials, and learning one step at a time, video by video, mistake by mistake. Every day I became just a little more tech-savvy than I had been the day before. There were definitely moments when I felt overwhelmed and questioned whether I could actually pull it off, but I was determined to figure it out.

Looking back, I think that’s one of the lessons this cookbook taught me, you don’t have to know everything when you begin. You just have to be willing to learn. Every challenge became another opportunity to grow, and little by little, all of those pieces came together to create So Berry Nutritious.

FF: All your recipes are plant-based and gluten-free. Please elaborate on this approach. How did you first get involved in the vegan lifestyle?

That’s a great question, and I’d actually like to make a small distinction because it’s one that’s often misunderstood. While all of the recipes in So Berry Nutritious are plant-based and gluten-free, I don’t consider myself vegan. To me, those are two very different things. My cookbook reflects the way I personally love to cook, but I don’t believe there’s a one-size-fits-all approach to eating. Everyone’s body is different, and I think it’s important that people listen to their own bodies and choose the foods that help them feel their best. If someone wants to add grilled chicken, fish, or another protein to one of my recipes, I think that’s wonderful. My goal has never been to tell people how they should eat, it’s simply to offer delicious, nourishing recipes that anyone can enjoy.

My journey toward plant-based cooking wasn’t about labels. It grew out of a desire to explore how food could support health and well-being, especially after both Louis and I experienced our own health challenges.

The more I experimented with whole, plant-based ingredients, the more I fell in love with how they made me feel. As for gluten, I chose to make every recipe gluten-free because that’s how I cook in my own kitchen. It was important to me that the recipes could be enjoyed by people with gluten sensitivities as well as those who simply want more wholesome meal options.

At the end of the day, So Berry Nutritious isn’t about following a strict set of rules. It’s about celebrating real, nourishing food that’s approachable and full of flavor. If my recipes inspire someone to eat one more serving of vegetables, cook one more meal at home, or simply enjoy being in the kitchen a little more, then I’ve accomplished exactly what I set out to do.

FF: How do you come up with a new recipe? Where do those ideas come from?

Recipe inspiration comes from all kinds of places. Some recipes are completely new, while others are my own twist on dishes that have been around for generations. Sometimes an idea comes from a meal I’ve had while travelling, a seasonal ingredient at the farmers’ market, or simply opening the fridge and wondering, “What can I make with what I already have?”

I don’t believe every recipe has to reinvent the wheel. Sometimes it’s about taking a familiar dish and giving it a fresh, healthier spin. I love experimenting and adding a little of this, taking away a little of that, tasting as I go, and making adjustments until it feels just right.

I think people often overcomplicate cooking. My advice is to have fun with it. Don’t be afraid to experiment, trust your taste buds, and remember that some of the best recipes happen by accident. That’s how many of my favorites came to life.

FF: What makes SO BERRY NUTRITIOUS stand out among other recipe books?

FF: I truly believe every cookbook has something unique to offer. Each author brings their own story, experiences, and perspective into the kitchen, and that’s what makes them special. If there’s one thing that makes So Berry Nutritious unique, it’s the journey that inspired it.

After a health scare that required surgery, I began looking at food differently. I became more intentional about the ingredients I was choosing and more curious about how the foods we eat can support our overall well-being. One feature I’m especially proud of is that each recipe highlights a key ingredient with a fun health fact at the top of the page. I wanted readers to not only enjoy cooking the recipes, but also learn a little about the nourishing ingredients they’re using along the way.

Another feature I love is the visual recipe guide. It includes a photograph of every recipe in the book, making it easy to browse, quickly find a favorite, or simply be inspired by what catches your eye. Every recipe in So Berry Nutritious is one I genuinely cook and enjoy myself. They’re made with simple, everyday ingredients that are easy to find because I believe healthy cooking should be approachable, not complicated. My hope is that readers will feel inspired to step into the kitchen with confidence and discover just how delicious wholesome cooking can be. When you cook with love, it shows.

FF: Would you please share some advice for people who would like to eat healthier and go easier on the environment? What are some easy food substitutions that anyone can adopt?

JM: My biggest piece of advice is not to try to change everything overnight. I think that’s where a lot of people get discouraged. Instead, start with one small change and build from there. Healthy eating isn’t about being perfect, it’s about making better choices more often.

One of the simplest things anyone can do is eat more whole foods and fewer packaged foods. Fresh fruits and vegetables, beans, lentils, whole grains, nuts, and seeds are not only nourishing, but they also tend to create less packaging waste. It’s a small shift that can benefit both your health and the environment. There are plenty of easy substitutions that still taste delicious. Try lentils, beans, or mushrooms in place of ground meat in tacos, chili, or pasta sauce. Marinated tofu or tempeh can be a wonderful alternative in stir-fries, grain bowls, and salads.

Instead of dairy-based cream sauces, try making one with cashews, or use avocado or hummus for a creamy texture in sandwiches, wraps, and dressings.

The key is not to strive for perfection. Even replacing one or two meals a week with plant-based alternatives is a positive step, and those small changes can really add up over time while also helping the environment.

FF: What are your personal favorite recipes in the book (you can pick one per category), and why?

JM: Oh that’s a tough one. There are over 100 recipes in the book, and each one earned its place but hmmm… if I have to pick just one from each category, here’s what I’d choose in order by category.

Rise & Shine Plates – Yogurt Chia Parfait
I love this one because it’s fresh, colorful, and such an easy way to start the day. It’s one of those breakfasts that makes you feel good without a lot of effort.
Glow in a Glass – Peanut Butter Smoothie with Espresso
This is my favorite on busy mornings. The espresso and peanut butter are such a fun combination, and it keeps me going for hours.
Leafy Leads – Arugula Salad with Basil Dijon Dressing
I just love the mix of flavors in this salad. Every bite is a little different, and the dressing really brings it all together.

Bowl’d & Beautiful – Roasted Veggie Power Bowls
This is one of those meals I never get tired of. It’s hearty, colorful, and you can easily switch up the vegetables depending on what you have.
Scene Stealers – Greek Potatoes
These remind me of my Mediterranean roots. They’re simple, comforting, and honestly one of my favorite side dishes to make.
Simmering Set – Tuscan Bean Soup
This is comfort food for me. It’s hearty, wholesome, and tastes even better the next day.
Pastabilities – Pasta Primavera Sauce
I love that it’s packed with colorful vegetables. I love pasta so much and this is always one of our favorites.
Main Characters – Butternut Squash Curry
This is probably my coziest recipe. It’s creamy, comforting, and perfect on a chilly evening.

Dressed to Impress – Basil Dijon Vinaigrette
I use this dressing all the time. It’s fresh, bright, and delicious.
Pro Sweet Endings – Chocolate Chip Oat Cookies
I love these because they satisfy my sweet tooth without feeling over-the-top. They’re always one of the first desserts to disappear and so easy to make.

FF: Did you make Louis taste-test all your recipes? What are his favorites?

Ha! Funny you should ask me this. Within the first pages of the book, I actually dedicate it to him.

So yes, Louis absolutely taste-tested just about everything in this book! He’s been my most honest (and most enthusiastic) critic from day one.

Some of his favorites are the comforting, hearty dishes especially the pasta recipes, soups, and anything with a rich, cozy flavor profile.

He also has a serious sweet tooth, so a few of the desserts definitely made it onto his “make this again immediately” list.

FF: Please feel free to share any additional thoughts or advice.

I’d simply like to thank everyone who has supported me along this journey. Writing a cookbook was something I had never done before, and there were many moments when I questioned whether I could pull it off. The encouragement I received from family, friends, and readers kept me going, and for that I’ll always be grateful.

If I could leave you with one piece of advice, it would be this, don’t wait for the perfect time to start something you’ve been dreaming about. Whether it’s learning to cook, changing your eating habits, writing a book, or chasing a completely different dream, just take the first step. You don’t have to have all the answers on day one. I certainly didn’t! Every small step teaches you something new, and before you know it, you’ve accomplished something you once thought was impossible.

I truly hope So Berry Nutritious finds its way into your kitchen and becomes a cookbook that’s well-loved, well-used, and maybe even a little messy from being opened so often. To me, that’s the greatest compliment any cookbook could receive.

And if you’d like to continue the journey with me, I’d love to connect! You can find me on Instagram @soberrynutritious, where I regularly share new recipes, cooking tips, and a behind-the-scenes look at what I’m creating in the kitchen. I hope to see you there.

Please join us in thanking Jackie for sharing this wonderful insight into her cookbook journey!

Chapter 73: Balloons And All That, Part 1 (continued)

… to be continued next month!

Things were beautiful in the country!
In the trees happy birds were singing.
There were beautiful flowers all about.
Smiley thought so white flowers
laughed as they tumbled in the wind.
Far away on the blue water
a little white boat danced in the sun.
How pretty things were!
How happy Smiley was!

A soft wind whispered in the trees.
The wind and the sun
made smiley sleepy . . . . . sleepy . . . .
He forgot about balloons . . . . .
He forgot about everything . . . . . .

BUT MONKEY DIDN’T!

If you’ve ever said something you regretted…
Sent the text.
Raised your voice.
Or made a decision in the heat of the moment…
This is for you.
When your nervous system detects threat, the thinking part of your brain becomes less accessible. That’s why even small moments can suddenly feel overwhelming.
The next time you feel yourself getting activated, remember one word:
PAUSE.

P: Plant your feet.
A: Air out with one slow, long exhale.
U: Unclench your jaw, shoulders, and hands.
S: Scan: What am I feeling right now?
E: Engage with your surroundings by noticing five things you can see.

It won’t solve the conflict.
But it can stop your nervous system from making the decision for you.
Regulate first. Respond second.
Save this so it’s there when you need it…not after.
